Liberian Rice Bread Recipe


16 OZ cream of rice
1 Tsp baking soda
1 Cup sugar
½ Tsp salt
1 Tsp nutmeg
2 Eggs
1 Tsp vanilla extract
1 Cup milk
1 ½ Cup water
4 Bananas, mashed
¾ Cups vegetable oil
2 Tsp ginger paste


1. Preheat oven to 350 F. Line a loaf pan with parchment paper. Set aside.
2. In a large bowl, add cream of rice, baking soda, sugar, salt and nutmeg.
3. In a separate bowl, beat the eggs and add the vanilla. Stir well. Add milk and water and stir again.
4. Transfer the wet mixture to the dry mixture. Add mashed bananas and ginger paste and mix well. Add the oil and stir again.
5. Bake about 1 hour and 40 minutes or until a toothpick comes out clean.
